Troubleshooting: Cheddar Aging


My little darling is having growing pains...the coating has been sticking to the drying mat in my cheese cave/fridge. When I put it in, it was rubbery, but not sticky at all and now it looks like I just put another coat on and it's quite sticky (top and bottom; the sides are perfect).

I contacted the company and was advised to let it dry a little. Once dry, check it for holes. If there are any holes that reach the cheese, I need to remove the coating completely and start again.

If there are no holes that reach the cheese, then I can put it back in with a lower humidity level and see if that does the trick.

I'm hoping that the only holes are the ones we can see here, just the dents from the drying mat pattern! Cheese-sitting continues lol!

But now I'm wondering if it wouldn't be better to buy some wax and wax the next Cheddar, instead of using the coating. Time will tell and I will update!

Looks good to me! I would just cut it open right now and eat the whole thing. In one sitting! :) I have NO patience clearly....

And NO digestive issues clearly lol...I could eat a whole wheel of cheese in one sitting too, with a nice big ol' bottle of red wine to keep me healthy lol! :)

Hey Nik :)) Yes...sitting on the porch with a bottle of red wine in one hand, the cheese wheel in the other...no plate or glass necessary lol! :)

Thanks Sam :)) There was a wee little bit of white showing...but that could have been the coating that was melting...argh...I decided to put a bit more coating on, lower the humidity and go from there. My fingers are crossed!!

Hi Nancy :)) Well, my Cheddar stuff came as a kit so I followed the recipe exactly. I don't see why you couldn't half the recipe, you'd just have a smaller wheel at the end I'm sure. My wheel measures about an inch and a half high, with a 5" diameter. The "rule" is a pound of cheese per gallon of milk. If you do it, can you blog about it? That would be so cool to see someone else try it! I'm on my second batch as I type this, just waiting for the curd to form! :)
