My little darling is having growing pains...the coating has been sticking to the drying mat in my cheese cave/fridge. When I put it in, it was rubbery, but not sticky at all and now it looks like I just put another coat on and it's quite sticky (top and bottom; the sides are perfect).
I contacted the company and was advised to let it dry a little. Once dry, check it for holes. If there are any holes that reach the cheese, I need to remove the coating completely and start again.
If there are no holes that reach the cheese, then I can put it back in with a lower humidity level and see if that does the trick.
I'm hoping that the only holes are the ones we can see here, just the dents from the drying mat pattern! Cheese-sitting continues lol!
But now I'm wondering if it wouldn't be better to buy some wax and wax the next Cheddar, instead of using the coating. Time will tell and I will update!
